The Perfect Cup of Icewine Tea

Icewine Tea makes a fine hot beverage or a fruity cold refresher.

Pour freshly boiled water over the teabag and steep for 3-7 minutes. 

For iced tea use 6 Icewine teabags and pour a quart of boiling water over them.  Allow them to steep for 5-10 minutes then remove the teabags and pour the mixture over ice.  Top of the pitcher with cold water and more ice.

High quality iced teas will often have a cloudy appearance.  This is normal, and a good indicator of quality black and white tea.

Icewine Tea

Icewine is the nectar of winter. Icewine is produced when the grape is frozen solid on the vine and harvested at a maximum temperature of -10 deg Celsius. The frozen grapes that make up icewine are then pressed and the resultant nectar exudes aromas of apricot and honey with a fine overall balance between fruit flavors, sweetness and acidity. Icewine ends up a golden color, or deep rich amber and has a very sweet taste. The flavor is a combination of apricot, peach, mango, melon or other sweet fruits. The rules of true icewine (governed in Canada by the Vintners Quality Alliance) state that the grapes must be naturally frozen – no artificial freezing allowed. Icewine is typically made of Vidal (a cross between European and North American white grapes). Normally used to produce a table wine, Vidal yields well. It also has a relatively thick skin enabling the grape clusters to withstand the elements better. Icewine is difficult to produce – not only do the grapes have to withstand the elements – but crows and other birds find Vidal grapes particularly tasty. After the ‘fight’ with the elements and birds, the grapes go through weeks of fermentation followed by a few months of barrel aging.

Our Icewine tea begins with young white tea leaves, picked early in the season.  Combined with black tea, freeze dried grapes and Ontario Icewine, it's a unique blend of fruity flavor that requires particular cooperation from Mother Earth.
