
The Perfect Cup of Superior Gunpowder Green Tea
Iced tea-brewing method: (to make 1 liter/quart): Place 6 teaspoons of tea into a large teapot. Pour 1 1/4 cups of freshly boiled water over the tea and let it steep for 5 minutes. Fill a serving pitcher a quarter of the way up with cold water. Pour the tea into your serving pitcher while straining the leaves. Add ice and top the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water]. Please note that this tea may tend to go cloudy or ‘milky’ when poured over ice; a perfectly normal characteristic of some high quality black teas and nothing to worry about!

Gunpowder teas arose from the Tang dynasty (AD 618-907) in China and continue to remain a staple for any green tea lover because of their quality and flavor. Like all quality teas, our Superior Gunpowder thrives in the crisp mountain climate, between 1,500-3,000 feet above sea level.
After plucking, each individual leaf is rubbed and twisted by hand then dried. In ancient times the leaves were pan fired until they were dry, but today many large mechanical drums are used to meet the demand for this popular variety of green tea. Many high quality gunpowder green varieties are still hand-rolled today. The process requires delicate skill and precision to fold the tiny leaves in a way that will allow them to easily uncurl and release their flavor when brewed.
Gunpowder green tea varieties from the Zhejiang region of China, such as our Superior Gunpowder, are prized for its fresh robust character. This captivating brew is also the base of many Moroccan mint teas.
